Hello.. Yum. { Corn, Pea & Carrot Fritters }

Hi friends happy Wednesday ūüôā Well the little munchkin is home from hospital safe and sound! We brought my niece home this afternoon after three days in the children’s ward, and as I watched this little champion maneuver herself into the car, out of the car, and all¬†the while carrying 10kgs of plaster around her tiny broken leg, I was brimming with¬†pride at¬†how brave she was being. It’s difficult watching anyone suffer, but as an adult, watching a child struggle and try to reconcile what is actually happening to their body, makes you wish you could take their pain for yourself. And just as I wrote that, I thought of Jesus.. because that’s exactly what He did¬†for you and me. Pretty amazing hey. ūüôā So I’m excited to be launching a brand new series called¬†“Hello.. Yum.” where I will share some of my favourite recipes.¬†Anyway, last night I decided to make tonight’s dinner for my sis. So here’s what I made: super-healthy, ultra delish (10-year-olds-will-not-notice-how-many-veggies-are-in-them)¬†Corn, Pea and Carrot Fritters ~ my slightly ‘tweaked’ rendition of Theresa Cutter’s fabulous Green Pea Fritters.
They are SUPER easy. In a bowl, put 300g of peas and corn (cooked and smashed up) along with 2 grated carrots and a pinch of sea salt. Let that sit for 10 minutes. (If it’s really watery, grab some of the mixture and squeeze some of the juice out in your hand).
Add in the zest of one lemon and 2 tbsp of fresh parsley, along with 2 eggs and 2 tbsp spelt flour (Theresa’s recipe suggests coconut flour, but I only had spelt!)

Heat your pan with half a tspn of organic coconut oil and spoon mixture on in small circles.
(You should fit 4 or 5 fritters on the one pan).
Cook on a low, gentle heat until they are cooked through.
And then serve with a yummy green salad.¬†So there you have it! Corn, Pea and Carrot Fritters. And the best part is, you can actually use whatever is in your fridge. Ie/ if you don’t have the exact vegetables, don’t worry, you can always substitute and use whatever you have. They always taste fab whatever you put in them!¬†
